How to make Chicken Salad

Chicken salad is beyond easy to make. Just throw some chopped produce in a bowl with your shredded chicken and Greek yogurt (or mayonnaise) and you're done.

 

What can you put in Chicken Salad?

Some common ingredients in chicken salad are as follows:

  • Greek yogurt or mayo
  • Celery
  • Pecans
  • Grapes
  • Apples
  • Cranberries
  • Relish
  • Red onions
  • Eggs
  • Mustard
  • Parsley
  • Dill

 

Greek Yogurt vs. Mayo

Greek yogurt behaves just like mayo in chicken salad with two exceptions. For one, there is MUCH less fat in Greek yogurt than mayonnaise (0.7g vs 10g of fat per 100g of each). Secondly, Greek yogurt has a lighter, tangier taste than mayo which serves as a nice compliment in chicken salad.

 

How long will Chicken Salad last?

Chicken salad will last up to 3 days in the fridge, and 2 hours at room temperature. I don't recommend freezing chicken salad, because it will ruin the texture of the celery and grapes.

Ingredients

  • 4 cups shredded chicken

  • 1 cup Greek yogurt (or mayonnaise)

  • 1 tbsp whole grain mustard (sub regular yellow mustard)

  • 2/3 cup celery, chopped

  • 1 cup grapes, sliced into halves

  • 1/2 cup roasted pecans, chopped

  • 1 tbsp fresh dill, chopped (sub 1 tsp dried)

  • Juice of 1/2 a lemon

  • Salt and pepper to taste

Instructions

1) Combine all ingredients in a large bowl.

2) Serve on bread, lettuce leaves, or by itself.
